Mighty Miso Black Bean Soup

Might Miso Black Bean Soup

Miso is a fermented soy paste that has an amazing salty/tangy flavour and is loaded with probiotics to help your gut flourish! Get the alkalizing benefits of miso in this heartier version of the plain-Jane soup.

Mighty Miso Black Bean Soup

1 tbsp olive oil or coconut oil
2 – 3 cloves garlic
1/2 tsp hot pepper flakes (optional)
1 inch piece of ginger, grated or thinly sliced
3 stalks green onion, chopped
3 cups spinach, chopped
½ cup chopped daikon radish
2/3 cup soaked wakame
1 ½ cups cooked black beans
3 tbsp miso
6 cups water, vegetable stock, or bone broth

  • Saute the garlic, onions, and pepper flakes in oil for 1 minute.
  • Add water and bring to a boil. Simmer for 10 to 15 minutes.
  • Add the chopped spinach, wakame, beans, and radish, and let simmer another 5 minutes.
  • Remove from heat and add miso. Stir to dissolve.

Variation: add ½ tsp toasted sesame oil with the miso, once removed for heat, to change the flavour.
